crock pot creamy cheddar broccoli soup.
there is quite possibly nothing more satisfying on a bitterly cold day than cheddar broccoli soup. seriously. nothing. on top of that, you all know how i feel about a quick prep. this crock pot broccoli soup is about as easy as it gets. most of the ingredients for this soup are staples in our house. if you’re missing one or two, start bundling up the kids, and get to the store NOW!
well, actually, maybe you should wait until you’ve read the recipe. as soon as you have done that though, go to the store. i promise you will thank me!!
Crock Pot Creamy Cheddar Broccoli Soup
1 cup of velveeta cheese cubed
1/2 cup cream cheese cubed
2 bags frozen broccoli florets
3 carrots peeled and shredded
4 cups chicken broth (i use bouillon cubes with water- 4-5 for 4 cups of water. if you choose to use them, be sure to add them to boiling water, and dissolve them before adding it to the crock pot).
1/4 cup butter cut into chunks
1/2 cup of italian dressing

now, before we go any further, i’m just going to go ahead, and address the giant elephant in the room. yes, those are, in fact, the ugliest kitchen counters in the world, and yes, they belong to us. you may wonder why i chose to take pictures of this delicious meal on them, and the simple answer is- i felt like it. moving on…
dump the broccoli, and carrots into the crock pot, and all of the other ingredients, saving the chicken broth for last. pour that over the ingredients. cook on high for about 4 hours, stirring occasionally.
