chinese food is a favorite in our house. everyone in my house eats almost any chinese food i put in front of them. this recipe is a variation of a recipe i found several months ago. i liked the recipe that i found, but it had some ingredients in it that wouldn’t normally be found in my house, and i would have to go out and specifically buy them for this meal. anything that requires a special trip to the store for ingredients that i most likely wouldn’t use for another recipe, is unlikely to happen, so i tweaked!
sweet garlic crock pot chicken
3-4 boneless skinless chicken breasts
1/2 cup honey
1/2 + 1/8 cup cup soy sauce
1/4 cup grape jelly
2 TBSP olive oil
1 TBSP garlic powder
1/4 teaspoon crushed red pepper flakes
1 Tablespoon corn syrup
Clean the chicken off and stick it in the bottom of the crock pot. I don’t even fully thaw my chicken when i use the crock pot anymore. i usually just let it thaw enough that i can cut the yucky stuff off of it.
In a bowl, stir up all of the ingredients, except the corn syrup. once it’s stirred up pretty well, drizzle it over the chicken. cook for 3-4 hours on high or 7-8 on low.
remove chicken from crock pot and shred it. pour sauce into a pan and add the corn syrup. allow to simmer until the sauce thickens.
return to the crock pot with the chicken, give it all a good stir. serve over rice.
so easy, and so so yummy!
